I am very aware of the age difference and thus the limitations of quality in fighting but holy hell that lancer and archer fight was great compared to the really boring stay/night fights 

just wondering if the quality of the fights are consistent throughout bladeworks? if so, to what quantity?

That fight is about the norm for ubw. Its what you can expect fro studio ufotable.

The original stay night was done by a different studio.

IMO that early Archer vs Lancer fight is one of THE best fight an all anime ever mostly because absolutely phenomenal choreography and how they managed to make such low priority fight scene look so good.
But that's ufotable for ya, so fight scenes in all of their shows look great.
The 2006 version was done by completely different studio, which is actually notorious for bad animation, so difference is like night and day.

The fights are great in unlimited blade works but the ones that really stayed in my memory and I watched multiple times are the ones from the movies. Saber vs berseker and saber vs rider are really insane.

I’d say the Saber vs. Berserker has the best animation while the archer vs. Lancer has the best choreography. I highly recommend the Heaven’s feel movies though because the animation is insane.

To add on I think overall Shirou vs Archer was the best fight. There wasn't that much action but the meaning behind it is still powerful (that is if you understood the symbolism in that fight)
