In the first part of jojo, Dio is an immortal vampire that only sun energy can kill. Dio in part 3, dies from jotaro’s stand but I don’t get it. Why did dio not just regenerate? I mean, he has regenerated before so how does he die from one punch? I get that he is weaker but he is still a vampire and jotaro does not know hamon. Maybe the answer is really simple, but idk.

If the stand dies the user dies. Jotaro destroyed The World, which might not have fully killed Dio because he’s a vampire, but it did enough damage that he couldn’t regenerate before Jotaro and Joseph put his body in the sun and destroyed it for good.

Araki forgot, or DIO needed to feed to regenerate such large areas of his body, or because his head was destroyed this time

The answer is very simple if you notice. Dio, as a vampire, possesses an immortal body, which physically can not be destroyed through normal method. Within the scope of the first two parts, it indicated that only by using Hamon or putting the body under sunlight can the vampire be completely annihilated. However, when part 3 came with the concept of Stand, it also implied that there's another way to kill a vampire. Since Stand is the manifestation of one's soul, it and its user are strongly connected, any damage taken for the user will inflict the Stand and vice versa. That's why when Jotaro used Star Platinum to punch Dio's The World and break its body, it also destroyed Dio's body as a result.

As far as i know, he killed his stand. The sun was just the icing on the cake. More of a "just to make sure he doesnt return".

Immortal and invincible are two different things, Dio can't die of old age. And after a harsh beating from jotaro he was weak and Jonathan's body was still rejecting his vampiric powers. And star platinum is also the physically strongest thing in the entire world. One serious punch could kill a normal human, and Dio was weak as shit so the punch was the only thing he needed to die
