Same good, old style anime. Eat man are more serious and violence, Trigun more comedy, but bots told good story about strange world, that looks almost like ours, and about uncommon hero travelling in this worlds.

There is no better way to say it - Eat-man is a copy of Trigun. You have enigmatic main character whose backstory is slowly discovered. Setting is somewhat futuristic world of wild west feel. Both are old style sci-fi stories and even the animation look very similar. However Trigun is definitely the better of the two.
This is a pretty one-sided recommendation -- to put it bluntly, Eat-Man is a very poor man's Trigun, and I would not recommend watching it (as it's mostly quite dull). If you did enjoy it, or want to see a show that takes on similar concepts with much better execution, then by all means watch Trigun.
Ironically, Eat-Man goes for a more serious tone than Trigun, but can occasionally be very unintentionally funny. Essentially, you feel like you're laughing at it, while Trigun is a very good show to laugh with (although it also has very serious moments and knows how to handle them). Both have
