Ridiculing the strongest enemy appeared since now like that wasn't good. Ikoma's fighting is boring.
Gurren doesn't have a normal growth but a hype growth. Pure entertainment. The story was a continuous escalation of scale. "fighting on a galaxy" I don't know if you can comprehend the dimensions.
I disliked the run, the conclusion was just an overkill. Too much victimization and baited drama, also uses awfully the plot device that I dislike the most: time travel. I stopped carrying for Kayo since the mother appeared for the first time because of the way she was portrayed.
Despite the plausibility, it is really anti-climatic, the episode had a good build-up and and the strongest enemy presented so far is beaten like that? :/ same issue I had with one punch. In gurren there's back and forth many robots destroyed and most important manages to communicate the effort the mc puts in his fight.
Unless this part is explored the world building sucks at the level of Tokyo ghoul.
Plot convenience is when things happen at the right time in the right place for the sake of the story. Kabaneri landed exactly at the perfect time. If they landed before it would've been less obvious, however this kind of timings are useful for the show because they create shock and hype, the problem is when overused or the hype is not satisfied.
Another trend I noticed in my taste is liking stories that start small to become something very big aka Gurren Lagann. But there are others like hitman rebor which is quite mediocre but I enjoyed it because of how it kept growing and growing. Other examples are naruto, dragonball, one piece... unfortunately some grow until they are so big that become stale.
If gurren started when the mc was grown up it wouldn't have worked. The whole show is a big climax from when he is a timid kid arriving at battling on the fuckin galaxy and the end is satisfactory enough.
Taste is important too, of course. To me they were almost all at least likeable and the show managed to involve me.
Probably the mood has an influence too but there are cases where it is obviously bad or good. In KnK the obviously bad (imo) are when Ikoma deals with kabaneri: they stop attacking, stay still and wait for him to kill them. In the first episode the kabane that jumped on him had time to attack Ikoma but the only thing it did was biting once and moving the arms in the air like swimming. In the 4th episode the Wazatori that was very agile and dodged bullets became a doll when Ikoma arrived. While Mumei scenes are more dynamic and with better flow and I was able to overlook inconsistencies/conveniences. I deleted inconsistencies because they don't affect the show very much even though there are at least some but not that important.
10 years is a long period, in ten years if they really wanted they could have discovered a lot of things about the kabane. In SnK they are justified for not having the possibility to analyse them very well because of how big and dangerous titans are but still discovered some things.

The issue with plot convenience is that they happen in crucial parts too often without enough justification. In ep 4 exactly before Ikoma and company were left behind kabane land on the train, ehhhhhh.

In short: rule of cool. That moment when laws of physics count nothing only for the purpose of hype/action/entertainment. Gurren is under rule of cool for most of the time. I wouldn't mention how in ep 4 Mumei flies around on the train without obeying laws of gravity as an inconsistency because under the rule of cool thus "justified".
In gurren there are retards adults but there are also normal adults or awesome adults, variety. I don't blame KnK for having retards adults, I blame it for having all of them retarded. No one that represents a normal adult.
I used inconsistent only once in the introduction then I changed to plot conveniences. However you might have a point, I will think about if it is really inconsistent or not and change accordingly.

Cependant, un "endless four" aurait été moins longuet et chiant à suivre. Bon le symbole n'aurait plus voulu rien dire grand chose (le 8 à l'horizontal) mais quand on regarde ces 8 épisodes en espérant qu'il va se produire un truc spécial avant le dernier ou alors que des variantes sympas vont survenir ben on se trouve bien bête d'avoir joué le jeu jusqu'au bout.
Bref un pari osé et raté (selon moi) parce qu'il y a avait à mon sens mille façons de mieux faire.
Ton post n'en demeure pas moins intéressant et rafraichissant. Peu de gens se faisant l'avocat du diable de nos jours avec des arguments valables qui plus est.
