I did write a bit of a guide on the series, and i'm not sure if it'll help you or not, but I thought I'd share it in case. To put it simply though, just start with either Fate/Zero or any of the versions of Fate/Stay Night (for example unlimited bladeworks), and ignore any of the others to begin with.
