@Paksh semi final is like, extremely important to the plot, the benizakura movie is something you can watch instead lf the benizakura arc when you reach it. Be forever is a must watch because its so good, and the final movie is the conclusion.
Ovas aren't necessary but they are good and recommended.

Skip ep 1 and 2, they are for manga readers, you can start from ep 3 of gintama (2006)

To make things slightly easier, crunchyroll has all the regular episodes last I knew, 1-367. So just knowing which episode to slip the movies/ovas in is all. And the first movie is optional, just a higher production retelling of the Benizakura arc

Additionally to what others said, I'd watch the slip arc episodes before episode 300. That is the correct place to watch them and where they're placed in the manga. The anime initially skipped them because they wanted to get to the final arcs of the series on ep 300.

but in this show, filler just means original content and they aren't that bad. Even the recap/clip show ones have something new to offer

Do not skip fillers. Gintama is a episodic parody comedy, so the characters start complaining about how Sunrise is getting no time and how they’re the only 4:3 anime left to switch (to 16:9). You won’t even tell the difference between filler and non-filler because Gintama is EPISODIC.

Not even that. Gintama is episodic, so most episodes don’t even correlate with each other unless the end of the episode says to be continued.

Watch all of it and don’t skip filler episodes unless it’s a recap. The filler episodes in Gintama are good 😊 I watched it in broadcast order and I watched all the movies and the Love Incense OVA. Just follow the order on Mal and you’ll be fine.

- Gintama recap aren't just recap, they're even in the most funny episode of the series (you'll unserstand why when you watch one!)

- honestly it's useless to try to watch only the "manga canon" episodes in Gintama, since lot of jokes where adapted for the anime, or they added/switched jokes. even the arcs aren't in the same order. you can't even tell what is filler from what isn't. it's a show that have tendencies to laught of itself, there's even an episode where they showed a scenes from the jump festa 2005 special and laughed about it. when I watched it I was wondering "I don't remember that", it made the jokes about it dull (watch the jump festa before that episode. I don't remember exactly which one it was, but I think it was in the 150). at the start of 2015 series (Gintama°) they were talking about how Be Forever Yorozuya was supposed to be the "ending". lot of time it's referencing it's previous episodes. there's not a single episodes or arcs which feel out of place or useless. the original stuff was integrated to the show!

- for the watch order, just watch everything in release order. for the 2 first episodes, it's an adaptation of the pilot chapter of Gintama. like everyone I recommend you to start to episode 3 BUT also to watch the 2 first later, they're funny if you know the characters. I'd say between eps201 and 202.
