Does anyone have any more information about this? Is this a one-off episode or will there be more, since it's called 'episode 0'?

There is no news about it getting a TV Anime.

It's called Episode "0" because it's a Prequel about the characters.
0/Zero is often used for that in titles in Japan : A reveal about the past , not for a Prologue episode.
