So I have just recently gotten into reading light novels so naturally I've wanted to start getting into reading Spice and Wolf. Now I've watched the entire anime adaptation. Does that mean I should start reading the light novel series somewhere in the middle where the anime ends? If so, what volume would that be? Or should I just not bother and start reading the series from the beginning? Any input would be helpful!

Apparently there is a new anime in the making? Not sure if remake or S3 though

I always suggest starting the source material at the beginning because even faithful adapatations usually leave stuff out or miss a lot of context because you don't get to see inside the character's thoughts.

The Anime altered some minor content of Volume 1 , and totally skipped Volume 4 , but adapted Volume 5 instead.
You can start at Volume 6 if you just want to see the continuation , but reading from the very beginning is preferred when changing media.

As other users above pointed out , a new Anime Adaptation was announced tho , and it's believed to be a Remake. (Still not confirmed)

The novels are quite dense compared to the show, so I'd recommend reading from the beginning, or if you don't have the time, from volume three, considering that that's where things start to get a bit more complex. Volume three also leads into volume four, meaning it has some slight differences from its counterpart in the show. There are a number of changes and additional details even from the beginning, though. For example, Lawrence is aware of Yoitz's destruction by a great bear from chapter one of volume one, not from volume three, as in the show.
This is all coming from someone only getting into the novels recently, too. They're very good so far.

How much does the manga cover? I can see it’s finished but the original source ( light novel ) is still ongoing

The Manga Art is too different from the Light Novel , so it's not really well liked.
The shading is really great tho , especially with how little black there is.

The Main Story of the Light Novel is completed at Volume 17 , but the Author started a short series of Epilogue to celebrate the 10th Anniversary. (There is also a Sequel.)
The Manga adapted those 17 Volumes , but skipped/highly altered most of it.
Therefore , it's recommended to read it only if you want to see the end without actually reading the Novel.

I’ve seen whole anime adaptation, read first 3 light novels and also read some of the manga adaptation.
With all due respect I can say that all of them differ.
I advise you to start LN in the beginning as it has some scenes that were left out in anime or simply couldn’t be portrayed. Also you’ll have easier time adjusting to authors way of writing.
