So that's the thing I saw like 30 eps a year ago and I want to get into it for real this time. My question is should I start from the beginning or continue from where I stopped even tho I don't remember much from it?

Just continue from ep you ended, first 50 EPS are worst part of Gintama and storywise also not important.

It's not necessarily important for the story, but it's better if you recognize all the characters and know the gags. If I were you I'd watch it from the start, but it's just me.

Ah you probably already get the gist of it. I'd say at the very least start again at the episode you ended on if your willing.

You didn't have to.
Gintama is in most part episodic, so you are not losing much if you don't remember.

I watched all the 265 episodes of Gintama including the The Final Chapter: Be Forever Yorozuya as well the sequels leading up to Gintama: The Very Final. And let me say it was truly worth it. Definitely one of the best anime I have ever watched. 10/10
