Im going to start watching gintama and i have been looking for the watch order...should i start watching it in chronological order or release date order?

Depends really. There is really just one series that is just misplaced in the timeline (if you look it up its name is Gintama. Porori-hen which literally translates to The Slip Arc meaning arcs they skipped over before)
Basically, the reason that happened was because they were planning to speed run to the endgame of Gintama where it's just a continuous arc for straight 50 episodes or so. To stall for time because Sorachi was taking too long, they animated some of the skipped chapters. If you want straightforward plot progression, watch it in chronological order. If you want to take a break halfway because it might be too much for you, watch it by release. Either way is fine.

I didn’t appreciate Porori-hen enough when I went by release order because I was trying to just get to the end at that point so I recommend either watching Porori-hen before the silver soul arc or watching the whole thing chronologically then going back to it.

Watch Porori-hen before episode 300. Just make sure to skip the opening, as it has a big spoiler in the middle of it.

Porori was pretty based. They released it at the exact point the story started to put me to sleep so it helped me not give up on the series. Bless the guy who decided not to adapt those episodes and the other guy who was like "guys the manga dude is way too slow we need to put something out there".

watching in release order is better cause it follows the manga
