I think it has to do with the pacing. That's the case for me atleast. If the pacing is extremly slow, I lose my interest

I'm going to be honest. Plain and generic characters that are too relatable. Sometimes, the familiar is unattractive as we live through it every second. Anime is meant to be our escape from reality. Slice of life is meant to try to capture parts of life and romanticize it, not mirror it.

The slow pace doesn't bother me but a story that can't make me care about it makes me bored. Maybe I watch everything and give it a low score or just drop it with an even lower score

If it's too close to real life issues then it can be odd to watch for me. I watch SoL anime purely for relaxation. Character development is just an icing on a cake for me.
But you might think SoL anime can be boring if you're not in the mood for it (like "I feel like I wanna watch Bleach!"). So the mood is also a factor.
