So I've been putting this series off for a while now, I'm not entirely sure which to watch first. Is it in the same sense as FMA FMA:B?

Yes it is. Hellsing follows the original source until about ep 5-6ish I think, and goes original from there. Ultimate adapts the manga more precisely and is better imo.

Isn't worth watching IMO. It's just 10 episodes of senseless blood and gore. Not particularly interesting.

Hellsing the original is superior in terms of atmosphere and absolutely epic soundtrack, but lacking animation, boring story (that doesn't even try to make sense by the end of it), the characters are still compelling though, whereas Ultimate is a gore fest with lots of action and beautiful animation and a solid plot. It's kind of the FMA vs FMAB thing all over again, you can either watch the original and then Ultimate and get more Hellsing overall or you skip the original and get to the proper adaptation, your choice. Anyhow whichever you decide to watch, I recommend you watch the dub, it wasn't critically acclaimed for no reason after all.

Dubbed? Not often I will watch dubbed versions. I'll give it a go!

To be honest I've watched few dubbed shows myself, but in this case Alucard's voice actor won me over.

Watch Hellsing ultimate, no real use in watching hellsing. Especially after the Valentine brother arc is over, it really goes to shit.

And yeah dub is great.

It's the same as Fullmetal Alchemist and Brotherhood in the sense that the first version started on the same track, but ended in a filler ending. Hellsing Ultimate follows the manga. I'd only recommend watching the first Hellsing for the OST (which is pretty nice) and if you just want to compare the different versions for kicks.
