Now, it might sound weird, but i'm asking this because i'm playing the VN first (Currently at 2/3 of Arc 5, so no spoilers, please).
What did the anime cut/add/changed from the original Visual Novel?

A 130+ hour long Visual Novel vs a 26 episode long Anime adaptation which is 26×23=598 minutes/10 hour long including OP/ED length. Do I need to spill out what's wrong? The answer is

That's not the worst part though. The worst part is that the anime only covers the question arcs. End of the Golden Witch to Twilight of the Golden Witch aren't covered in the anime.

Not really, i made it five days ago.
I've already finished Arc 5 in this meantime.

I am aware that the anime only covers the Question Arcs, my question was what in them was cut/altered in the adaptation.

I misread November as May because I'm stupid.

I've heard people say that they cut out deaths in the anime, which throws off the Witch's Epitaph.

I haven't watched all of the episode of Umineko When They Cry. But I have read the manga & played the Visual Novel which I do prefer. The manga had some cut content, but it was nowhere as bad as the anime. The Visual Novel which I am enjoying the most has a lot of details within the story & character interactions. I did wish that anime was good as Higurashi When They Cry when Studio Deen was handling the animation even though it wasn't the best animation, I stilled enjoyed it since the story is really good & the suspense and mystery horror would make my spine shiver. I do hope that Umineko When They Cry gets a reboot that is close to Visual Novel without cutting a lot of important details though I am not sure about Passion doing the animation because I am kind of hoping Madhouse or Production IG will do the reboot.

Most of it is missing, really.

For those that don't want to play the VNs but still want to get the full extent of the story, just read the manga. Or at least read it before watching the anime.

Yeah, this show should have gotten a remake or reboot or what have you. Not Higurashi. Umineko definitely needed it.

Visual novel is done milestones better in terms of characters, pacing, and mostly everything. The anime is ok. The anime does not adapt all of Umineko arcs so no definitive ending there.

I agree with you. I'd rather have studios like Madhouse or Production IG that did a reboot on Umineko.

A scene (actually, most scenes) that was beautifully elaborated in the vn for around two hours was completed within 3 minutes in the anime.
This should give you a sense of scale of how ridiculously rushed the anime is, like, it's beyond comparison.
The only time where the anime is useful is when you have read the vn throughout and want a quick recap on the important events for theory crafting and stuff.
